Aged Brescianella has got to be one of my favorite cheeses! In fact, it was one of the first cheeses that we chose for the store's short list of cheeses.
Brescianella Stagionato is a washed rind cow's milk from Lombardy in northern Italy with an oozy consistency and a milky complex flavor. Not quite as stinky as Taleggio, this cheese is a perfect foil for medium bodied white wines.
Try with fruit, as part of a cheese plate, or on a pizza(!)
